you are better off cooking normally unless you want a dried out turkey. besides cook times vary with every range get to know your stove

For the turkey, should be between 20 - 25 minutes per pound. About 20 minutes per pound for the ham, if memory serves. This is after your smoker comes up to temp and you start to see smoke from your smoke chips/chunks.

At about 20 minutes per pound, take the temp of the ham and turkey with a good instant read meat thermometer.

Also, I generally don't use water in the water pan for hams and turkeys, but that is a personal preference. If you put water in your pan, it'll probably take a few more minutes per pound.

obviously your turkey has done for a LONG time. But for the future, the speed bake takes 30% less cook time

For a standard turkey that's around 6kg/13lb, the cooking time will be around 4 hours. It's best to calculate your cooking time at 40 minutes per kg or 20 minutes per lb to get the most accurate time.

Too big of a turkey

I LOVE these roasters!!! And now you've made me hungry for turkey. Yum!!! ;)

You shouldn't have a problem cooking your big bird in that roaster. You may have a little trouble getting it ALL to fit in at first, but of course, the turkey will shrink a bit as it cooks and it'll all fall into place. When you're stuffing Tom (the bird...Not the guy) into the roaster, you may have to coerce the cover to fully close over the top, but it shouldn't be too much of an issue. I've cooked even larger birds in my Rival 18qt without any issues, other than some that I mentioned above.
