Wind the watch: If the battery is not dead, you may need to wind the watch to get it started. Most Breitling watches have a self-winding mechanism, but if it has not been worn for a long time, it may need to be manually wound.
Set the time: Once the watch is running, you can set the time by pulling out the crown (the knob on the side of the watch) and turning it until the hands are set to the correct time. Push the crown back in when the time is set.

I am afraid apart from the aerospace you wont find most breitling manuals on line unless you find one on ebay with a watch box normally GBP50. I suggest you contact Breitling UK who will provide one at relatively low cost, they are very helpfull.
On most. Turn the winding screw anti-clockwise until it clicks and pops out slightly. Pull it all the way out or half way out to change the time or date.
unscrew the crown anticlockwise until it pops out then turn it clockwise about 50 times.
If the hand or date move, you pulled the pin too far. Push it back in and continue winding.
