You need a proper watch wrench to open or pry the watch back off. A generic watch wrench have three adjustable pins but there are specific wrenches for the specific nanufacturers, most notably Rolex. You can still open say a Rolex with the generic watch but you risk scratching the case back. A jewelry watch repair shop should have the proper wrenches but often only have the generic watch wrench unless they are a registered approved repair centre for the particular watch brand. Harbour Freight sells a cheap low quality generic watch wrench but be careful when you use it.
