What setting do i use for gluten free bread. i have the mix

I have just used Glutafin Bread mix in my Panasonic Bread Maker, the programme I use is basic Med Loaf rapid bake (1 hr.55mins), I found useful to put the water and oil in first followed by flour, yeast ,salt , dried milk then sugar
it didn't need to stirred part way through and had a fabulous loaf at the end.

Recipe for basic white bread

You don't say what size loaf you want.So here's a 1.5 size loaf recipe:
1c. warm water.2TBls oil. 2Tbls sugar. 1 1/2 tsps salt. 3c flour. 1 1/2 tsps rapid rise yeast Put into the pan the ingredients in the order they are given.
Select your programme and enjoy.

1.5 pound loaves often come up short of the top. One thing you can do to get a little better size loaf is to use 1/2 the salt recommended. If you like this solution and it works for you please send consider sending a small courtesy payment to my paypal account at [email protected]
I always use 1/2 the salt recommended and get a better size loaf and it's healthier for you also.

The bread machine was finished and upon opening and trying to get bread out of the machine I found that the top of the bread was sticky and wet. why??? i was carefull the yeast, flour & OTHER...

Hi, a common mistake that people make using bread machines is to use the wrong kind of flour. If you are using all purpose flour it will not perform well. You need to use flour marked "bread flour" on the bag. Also the yeast and water have to be at the right temperature. Here is some operating instructions one baker used for this machine;

But here's how to actually use it:

Put wet ingredients in loaf pan. Heap dry ingredients on top. Make a well in dry ingredients and add yeast, ensuring it doesn't touch liquid if you want to use the timer. Put pan in breadmaker, clicking into place.

Plug in breadmaker but DO NOT touch the on/off button till the very last.

Using the "menu" button, choose what type of bread you're making (the top two rows -- normal, fruity etc).
Using the "crust control" select how dark you want your crust.
Using the "timer" select how long till you get the finished product. The minimum is 3 hours for quick bread/medium crust, which I often use, the maximum 14 hrs 30mins. It goes up in 30 minute increments with each push of the up arrow. Remember, what the timer shows is when the finished bread will be ready.

Once you're satisfied with your settings, press on/off

If you choose "fruity bread" the timer will beep into the kneading process to tell you it's time to add the fruit. It goes in at a later stage.

When the bread is finished, it will keep on a warm cycle for a while until you switch it off.

I use high grade flour and add 1 tsp gluten flour to each cup of flour. The bread rises more.

Black & Decker B2250 - Recipies

Here's a good basic white bread recipe that works great with a BD2550 (and usually doesn't even **** the mixing blade off of the bottom of the machine)

1 cup warm (not hot) water
1/3 cup milk
1 tablespoon sugar
1 teaspoon salt
1 1/4 tablespoons butter/margarine
4 cups flour
1 teaspoon yeast

Heat the water and add the milk to it. Dissolve the sugar and salt into this mix and pour the liquid into the bottom of the bread maker bucket (make sure the mixing blade is already in). Melt and add the butter to this mix. Add the 4 cups of flour directly on top, but do not mix it in. The flour will float on top of the liquid. Make a small dimple in the top of the flour in the middle with your finger and add the yeast into that little crater (at no point while adding ingredients do you let the yeast touch the liquid). Set the bread maker for basic setting 1, light crust, 2lb loaf and let it do it's thing. 3 hours later, you'll have a nice loaf of white bread with good consistency and density, and it usually leaves the mixing blade in the bucket (rather than having to dig it out of the loaf after).

Recipes Are wrong in instruction booklet

I had a similar problem when I switched machines. It seems that most recipes will work in same size machines (1 or 1.5 lb loaf size). My issue was that my old machine had to have liquids in first and then dry ingredients (new machine is the opposite). I ruined several loaves before I figured out the issue. I would have never imagined the order of ingredients would make a big difference.
