I am looking to purchase a Lincoln Impinger oven model 1961-Q. The input power to the unit is 208 volt, 3 phase. The incoming power to my business is 240 volt single phase. Any way to make this work?

No you dont need to light up an lincoln impiger gas oven. Its automatic thus you only need to conennect it to gas and power then switch on the power switch not forgeting to set the temparature.
Most Baxter BXA ovens have separate power supplies, usually 120v for the controls and lights, a 120v output on a circuit breaker for the roof fan, and a 208VAC 3 phase supply for your convection motor. Older Baxter ovens may have a 3 phase service disconnect inside the electrical/burner compartment, if I recall correctly the BXA models do not and the only way to shut it off is via the 3 pole breaker at the service panel.
208 is usually referred to as a singe phase but technically it is poly phase. The industry refers to it as single phase as it is uses one line as power and the other as "Common", not neutral. If the plug has 3 prongs, It is 2 lines of power and an earth ground. If the plug has 4 prongs, It is 2 lines of power, one neutral, and one earth ground. Let me know if you need more.
It could be but, the expense of replacing all the 3 phase controls would cost more than what it would be worth. Sell it and use the proceeds to purchase a single phase unit or if you are wanting to use it in a commercial building, see if you can have 3 phase installed by your electric provider.
this is caused probably by a faulty power board or a switch. In the front all three switches share a common power source. I would start there to see if voltage is present on all three switches. These are also tied into a 24 volt control transformer it would be the next thing I check I believe it is xfrmr 3 on the print.
