Question about Combi Ovens
SOURCE: is there such a thing as a descaling unit for a
These combi ovens are so prone to problems if you do not have descaling filter system hooked to the COLD water supply (the only water that should be fed to this unit) for your generator inlet. The other water hookup is for your condensate drain (condenses steam leaving cook chamber headed down the drain) and it does not need to be filtered but, also needs to be COLD. These decaling units are quite pricey but, a service call to replace the generator (boiler in laymens terms) will cost 3 times as much & the unit will be down for days waiting on parts. Call Blodgett w/ your model # & talk w/ technical service & ask their recomendation. They can be reached @800-331-5842 & follow the prompts. Depending on your water conditions it is still recomended to descale the unit on a regular basis using a QUALITY descaler (not the junk you buy from Sysco or Dollar general) Cleveland descaler is the BEST.

SOURCE: RATIONAL COMBI OVEN ELEMENT GLOWING RED -IS THIS NORMAL?
your oven is electric yeah? the hot air element shouldnt be glowing like that, it glows with the door open? the oven has a over temp stat so if the oven got too hot then it would trip out, if it does then the solid state relays will have to be changed, but if it carries on as normal then shouldnt worry
