Whirlpool Microwave includes over the stove exhaust fan. The fan starts on it's own and will not shut off.

Recently installed new bulb under the unit to illuminate the stove below. The sudden start-up of the exhaust fan was about 26 hours after the stove was used below it. There is no heat source anywhere near the microwave.

The turn table and fan are connected in series with the bulb,as you have mentioned that you have replaced bulb,so please check again for any loose contact on bulb holder or bulb continuity again.

Fan turned on after cooking because a thermostat got to hot and tripped turning on the fan to try to cool the unit.  The unit went completely dead when thermal fuse tripped which is located above the cavity on the left side.

Hopefully the hood / vent fan was always on when boiling on the stove top.

Otherwise moisture can get into and damage the keypad or control circuit board.

That may be the problem.

If this is a convection model, it may have a bad thermistor (not to be confused with a thermostat).

The full model has three more digits, in case you need more help and want to post that.

That is a normal safety feature.

That's only covered in a very subtle note in the hood fan section of your owner's manual:

NOTE:If the temperature gets too hot around the
microwave oven, the fan in the vent hood will
automatically turn on at the HIGH setting to cool the
oven. It may stay on up to an hour. When this
occurs, the fan can not be turned off.

If for some reason you don't have your owner's manual, you can download it here.

Enter your model number as MV1610ST with no spaces.

you must understand that any manufacturer has the proper design engineering from to save electricity, etc. And they using the new concept of reingeenering.
If the microwaves do not HEAT and working, do not worry.

When you hit "Start" to microwave, do the inside light, cooling fan, and turntable all come on?

When I say internal cooling fan, I do not mean the hood vent exhaust fan which you can turn on and off manually.

I'm instead talking about the internal fan which comes on automatically whenever you microwave.

It is vital that the cooling fan runs, or the turntable and stirrer won't work, and magnetron will soon be destroyed.

If not, then you probably have a bad door switch or door switch mount and should see these files:

If so, then your magnetron may be failing or the cooling fan itself may be.

If your under hood lamps recently went out, that surge could have damaged the control circuit board, which we regularly repair nationwide by mail for $39.95 postpaid in about a week or so.

There should be a "mini-manual" (tech sheet) hidden inside the unit behind the control panel or hidden on the left side behind the grille, which is very helpful when troubleshooting, testing, and locating components.
