U need that hose to direct the warm air outside the area to be cooled. If you remove it, the hot exhaust will stay in the room being cooled and negate the cold air being directed into the room.
That is why regular room AC units are mounted on window sill. Cold air in, hot air out.
fogging up occurs when the water vapour ( Humidity) in the cab air hits the cold windows Remove the humidity by running the ac in conjunction with the heater . AC units to make the air feel cold by removing the humidity in the cab air allowing you to perspire more easily and you feel cooler. By running to two together ( climate control in some cars) the fog will quickly disappear.

A window unit is designed to have the side with the controls in the space which is to be cooled and the other side to be outside. If you simply put it on the coffe table, blowing at you, you may feel cooler for a little while, but the heat of the fan motor and compressor added to the heat from the outside coil, will raise the temperature of the room.
Best bet is to put it in a window or to have a sleeve made for a through the wall installation.

Even cooling of the various rooms is the resposibility of the ductwork. Each duct has to be the right size for the room it is serving. There is usually some adjustability in the delivery grilles. Partially close the grille in the coldest rooms. That might get you by, but proper duct sizes are the ultimate way to distribute the cold air properly.
