The best you can do is connect the dual 2 ohm voice coils of each respective sub in series (4 ohms total per sub) and then connect each sub to one channel of the amp. This will give each sub 1000W, which is the rated maximum from Kicker.

If the subs are dual 2 ohm voice coils.....
If the subs are dual 4 ohm voice coils, you can't connect both subs in any fashion to get a 2 ohm impedance. The best you can do is make a single sub 2 ohms by connecting both "+" terminals together and both "-" terminals together or the pair of subs 4 ohms by doing the same, then connecting one sub's "+" terminals to the other sub's "-" terminals, then connecting the other "+" and "-" terminals to the amp.

Are your Speakers dual or single voice coil? The best way to find a wiring diagram is look at the rockford fosgate web site. I ll give you a tip to keep in mind. when wiring the ohms of a sub when you wire it in parallel positive to positive and negative to negative on one speaker you have left it in 2 or 4 ohm configuration depending on speakers. When in a series the ohm load will change by wiring positive and negative together will give you a lower ohm the more speakers you add to the amp. Fosgate will let you see how its done

The Kicker 08ZX400.1 would be a great amp for your subwoofer. It will work into a 4ohm load with no problems.
But you can buy an amp with more power, looks better, has a smaller footprint, and cost less than the 400.1. I'd look at the Alpine MRP-M500. Take a look at it here at Crutchfield. The M500 is also easy to install, runs cool, and is very efficient.

Run the amp in stero Run the 2ohm to one chanel, Wire the dvc 4ohm to run 2ohm + to + - to - to the other chanel and you should be fine.
If you had a 1ohm stable amp you could run both speakers wired 2ohm to a mono amp and have a 1ohm set up and double the power!
