I have an 8 1/2 pound boneless leg of lamb how long do I roast and at what temp. Room temperature or cold?

How long and at what temperature should I roast a 6 pound leg of lamb?


20-25 min/lb for med rare (145)
25-30 min/lb for medium (160)
30-35 min/lb to dry it out and make it tough (170)

This is cooking at 325. But don't go by time. Get an instant read thermometer or a probe thermometer and go for internal temp as deep into the roast as you can get the thermo without touching the bone. There are too many variables in cooking roasts to judge by timing.

I do not have temperature prob to check the roast lamb how much per lb


Roasting Temperature: 325°F
  • Rare: 125°F (about 15 minutes per pound)
  • Medium-Rare: 130°F to 135°F (about 20 minutes per pound)
  • Medium: 135°F to 140°F (about 25 minutes per pound)
  • Well-Done: 155°F to 165°F (about 30 minutes per pound)

I want to roast 2 boneless leg of lambs in same oven. One is 3lbs the other is 3 and a half . How long to cook them?


About 25 minutes to the pound for a pink center.

Example:
  1. Put both in for about 1 hr - 15 minutes (or so)
  2. Pull the small one.
  3. Cook the bigger one 15 minutes more (or so).

Cooking time


At 450 degrees for about 30 minutes and about 8 to 12 minutes a pound after that at a temp of about 275 or until the meat gets to be 150 degrees.
