Hi Bonnie, Do you have the user manual that came with the printer ? If not you can download a copy bt searching the web, Search : canon pixma mg2120 user manual and you will be able to download a copy of the original factory manual.
There are two buttons on the MX310... one for colour and one for black & white.. Depending on which mode you're using (ie: copy, fax, etc..) these buttons will copy, fax, etc...in either colour or black & white accordingly.
These buttons are located on the far right of the control panel with colour closest to the user, black & white above that and then the stop button above and right.
To fax in black & white (or mono as it's otherwise called) just choose the Fax mod, then press the Black button and you're away...

it's very important to connect your MX 300 with the telephone line the right way! Please read once more the part "Preparing the machine for fax" in the chapter "Faxing" of the MX 300 User's Guide and mind the hint "Important: Do not connect the machine and external devices in parallel to the same telephone line using a splitter (A). The machine may not operate properly."
