Sometimes it does take time for things to stabilize. I have had weather instruments take up to a day to get right. Unfortunately, just because something is new does not guarantee it is working perfectly. That's why most things come with a guarantee.

Get a thermometer for both fridge and freezer to ensure temps are correct. Freezer should be around 0F and fridge around 37-38. If temps are correct but display is reading that much differently, control is most likely bad.

Freezer too cold

Is this a model=>FGHC2342LF Sounds like the freezer=> 240597203 Thermistor may be defective??There should be one in the freezer that regulates the temp and this one may be causing the compressor to run continious and you may not be getting the correct reading from freezer. Have you seen this?

I have a walk in freezer with 404a, I am reading about 25 on the low side,the outside temp is about 110 degrees,its not low on freon,and everything seems to be working fine, except I cant get the temp down...

What is the high side pressure?
Are the indoor and outdoor coils clean?
Indoor and outdoor fan motors working OK?
Ice on the coils or expansion valve?
Is the unit sized correctly for the space?

Temp and humidity levels are not correct

It sounds as if the temperature sensor probe is touching the cold coil inside. The sensor is located in the incoming airflow, in front of the cold coil. It must not touch the coil. This should be visible with the cover off. You can gently bent the sensor away fron the coil, 1/4-1/2" of clearance is plenty.
