You can find these on ebay for far less than it will cost to repair the ones you have. Here is one for a current bid of $39.99. Kitchen aid burr grinder adjustments

You are correct, the grider positions are locked internaly so the grinder will not go too fine since this can damage the blades and also too fine need more power from motor and also can block it by rottating normaly. However you ir open the grider you can overcome the lock and udjust so the grinder can grind more fine coffee. In order to be always at the safe side just move gradualy step by step until you find the perfect grinding and adjust so that will be the minimum plus one mor move for furure adjustment if you need.
Just for reference the corect grinding is for 7 to 7.5 gr of coffee the running time of the coffee from your machine should be 25 sec for 25 cc of coffee aprox.

Cannot get the grinding ring option to turn

This is a set screw. You need to take this out.
You can access this to either clean the burr
grinding wheel. Maybe this needs changed.
If you google the Kitchenaid A-9 Burr grinder you can get instructions to download on this machine.
