it's asking if you want to update firmware, firmware is the softer internal to the printer that tells it how to work / behave / communicate. this is sometimes updated by the manufacturer.

sounds like you are in the service menu...if you press the cancel buttons, or shut it down and restart the printer it should return to normal operations.

you have a "Velocity deviation error"
meaning that the print head isn't traveling at the correct speed. Clean and lubricate the shaft it runs on, the above site also suggests replacing cutter unit and/or main board.

Epson is pretty cautious with their proprietary materials.

When you put the printhead back into the machine, did you seat the dampers correctly?

Are you getting a nozzle check at least?

You will probably have to configure your ports properly. Check which the server is on, then assign the printer to the same port.
