You have to setup an account. Like on Google or Yahoo. Then tell people what address you have and ask them to send a mail.
Of when you have an e-mail address from someone you could send a mail to that address.

Be aware you have to choose a unique logon name. Because most providers deliver the service for years and have millions of users, that could ba a bit tricky. But you could try first name some number and then the last name or in any order. DON'T forget to choose a GOOD password and write it down . Put it in a safe place, because when loosing it, you can't access the account.
You can always restore it to brand new.
You need a computer with iTunes and the charghing usb cable.
Before restoring make sure that the Find my iPhone app is off, otherwise after restoring it will give you the very same wrong email.
Once that is off, connect the ipad to the computer and click restore.
Once restore is complete, at very end you will be prompt with 2 questions:
1. Set iPad as brand new
2. Restore from (your name) back up.
At this iem you can choose either one, because Find my iPhone is off. And now you can change the email address.
It is your best option since it is way too difficult without restoring it.
You first have to setup one or more mail accounts, in settings and under e-mail. While setting up an account the iPad will check if you are using a correct account with a correct password. You also should give in the correct server and server name for in and outgoing mail.
If the setup of the mail address(es) are a success, you then can receive mails and send mail.
Everything is clearly explained on the apple website. I don't think I should type here, what you already can read there.
When logging in, on that page is the button, forgot password or something like that. press that button and you will get an email, on the address you gave the site while setting up your account. Follow the instructions in the mail and everything will be ok in just a few minutes.
You have to go into Settings -> Mail, calendar ... and add a new mail account as "Other". Put in your email address anywhere you see user name. Choose the POP type of account - IMAP won't work. Use the following for settings:
incoming server: mail.nexicom.net
user: your email full address
password: your password
outgoing server: outgoing.nexicom.net
user: your full email address
password: your password
Tap "Next" and it will likely fail and ask if you want to connect without SSL. Tap "Yes" and you should get all green checkmarks and mail should now work. :v)
