It all depends on the type of watch you have.
Manually, the time (and date) are set by releasing the crown wheel and turning it so that the hands move clockwise to the correct time. If you have a date function, you may have to cycle the crown wheel quite a few times to reach the correct day and date.
On digital watches, the user guide will indicate which buttons should be pressed to set the time and date. Refer to the user guide that came with your watch, go onto the manufacturer's website or go back to the store where you bought the watch and ask them to show you how to do it.
On smart watches, the time should be set automatically when the watch synchronises with your smartphone or wifi signal.
