I have a 2005 Sienna XLE AWD, if the fuel door is open, the sliding door will not stop short of hitting it. Is this an easy fix?

There should be a latch to prevent opening the sliding door opening when the fuel cap door is open. It could be malfunctioning.
There is a cable from a push knob behind the fuel cap door which goes to a latch below the sliding door approx 15 cm's or so from the front side of the door opening.
I would check that the push knob or latch is not stuck in the open position allowing the sliding door to open when the fuel cap door is open. Try to push/pull the knob inside the fuel cap door and make sure it goes in / out freely, if this knob is stuck you could try a squirt of WD-40 (or similar) and see if you can gently grasp it with a pair of pliers and get it to slide in/out freely. Do this while the sliding door is closed.
If this doesn't fix the issue, remove a rear interior panel from the sliding door, you should see the cable, check that it is intact and adjusted correctly.

This may or may not work depending on exactly what is wrong with the door, I cant tell what is wrong without looking at it directly however:
You can try starting with all doors closed and unlocked, keys in hand disconnecting the battery and letting the vehicle sit for 2 min or so, then reconnect the battery. Put the key into the ignition and turn it to the on position but do not start the van. Next press the button to disable the power sliding door for the drivers side, then manually open the door fully, wait 5 seconds, then close it manually fully. Press button the button again to re-enable the power sliding door, then try to use it with the automatic feature either by pulling the handle or using your remote, this may or may not work depending on if the door has somehow become de-initialized (it should work now) however if something is broken inside the door closing mechanism or door closed/open sensors, the door will continue to malfunction.

Check to see if there are any restrictions in the door track. If the sensors feel any resistance they will stop movement or reverse it for safety reasons. There could also be loose connections in the door wiring loom.

Both manual sliding doors on my Toyota Sienna will not open

If you can remove the inner door panel you will see a maze of cables running to the various locking points on the sliding door. If the cable going to the FRONT latch on the sliding door is broken (or in my case, simply dislodged inside the door) the door acts as if it is frozen shut.

The front cable is short, and easily replaced even by a newbie mechanic.
