Pilot lite working. When temp switch turn up to 365 you can here a click but gas burners do not light. Sometimes when you turn the switch back and forth the burners will light and bring oil to temp. and shut off but as oil cools burners do not come back on.

Sometimes certain models turn off if you touch the thermostat before it lites... We've seen this happen many times, so you would need to light the fryer first, wait until it's stable before turning your thermostat to desired temperature.
The pilot flame will stay lighted even when the thermostat is off, you have to turn the gas valve knob to off position in order to shut the pilot flame. But when burner flame remains on after shutting off the thermostat, the thermostat's mechanical contacts are shorted or remained engaged. If this is tha case, you have to replace the thermostat.
Make sure gas valve is in the ON position after lighting the pilot. Try jumping the thermostat terminals together to see if burner comes on. Three things could cause this problem

First, never light when the pot is empty, you can fill with water if you have no oil. Open the door, check the thermostat and make sure it is turned off.(The burners will light if thermostat is on) Behind the thermostat you will see the gas valve. Turn knob to off, then to pilot. There is a notch at the pilot position. Now look up in the middle behind the burners and you will see the pilot assembly. Push in on the knob on the gas valve while you hold a long lighter close to the pilot assembly. Once the pilot lights keep holding the pilot knob in for 20 seconds. Now let off the pilot knob. Pilot should stay burning. Now turn the gas valve from pilot to on. Now turn the thermostat to desired temp and the burners will fire off and start heating.
