If you're using component cables (red/green/blue) it usually means that you have the cable ends mixed up.
Other than that, the PS3 shouldn't output black and white, so it would be a TV setting or cable problem.

Hi, check the setting of the TV, where you can see TV display and you will see two or three option of changing the TV mode(NTSC and PAL).it still on NTSC that is while it is sowing black and white. Switch it to PAL it will start showing co lour screen for you to enjoy the game.
Its an a/v problem. It may be with the connections or the lead in the ps3 that controls the video output. Try a new a/v cable or try connecting it to a different port on your tv. Hope this helps...

I had the same problem. I fixed it by changing system settings, there is somewhere on the console where you can choose between two differant colour options. have a look around and try changing it on the ps itself.
It may be the T.V. And make sure that the connections are with the right colors, take a light back there and check to make sure. You said the T.V. plays through black and white, maybe the T.V. is old and can only play black and white but those cables will not make a T.V. go to color.
Does all games play like that or a specific one.
