We want to just make dough

According to the manual, page 23, "H:HH" means "Temperature in breadmaker is too high". The solution is to "Press the Stop button. Remove the baking pan, leave lid open and allow to cool. When cool, put the baking pan back in, set program and start the program again."

Paddle problems.

All bread machines have a final "punch down" of the dough that lasts a few seconds before the final rise stage. When "punch down" is over that is when you can remove the dough ball, remove the paddle, set it aside and place the dough ball back in the pan. It usually helpsicon1.png to have your hands dusted with a little bit of flour.

Crust is thick and hard, paddles tear large chunk from bottom of loaf when removed from pan.

unfortunately all bread machines leave the hole in the bottom where the paddle is. some machines leave a bigger hole than others, with the exception of the cuisinart cbk-200 which allows you to remove the dough, then remove the paddle, then reshape and replace the dough....One thing you can try to have a softer, lighter crust is to replace the water in your recipe with the same amount of milk. If the hole in the big hole in the loaf really bothers you I suppose you could remove the dough exactly at the end of the final knead, remove the paddle and replace the dough in the pan...I've never done it but I've certainly considered it! best wishes and happy breadmaking...

Hi, If this is the third time using it, it could be defective. Return it for service. If not under warranty, try a few things. 1) Make sure the pan is inserted in the machine correctly. 2) Make sure that the paddle is not sticking, or the sealed bearing on the bottom of the bread pan is not broken or frozen. (Take pan out and see if you can turn the paddle freely by hand). Or finally, the belt may be loose and slipping, especially when it takes more power to knead the dough the second time. Motor fails to operate - very hit and miss

Make sure you are using the dough blade for dough instead of the regular blade - dough will cause the regular blade/assembly to gum up. This is actually a VERY high quality unit w/ a 20-year motor warranty. I would see if you get better results with the dough blade. Don't give up on it yet.
