Smoke at 227 for 3 hours after applying rub. Then foiled for 2 hours same temp. Then took out of foil and continued cooking at 227 for another hour. This was our first ever attempt at smoking.
For pork ribs, start by cooking them for 2 hours, at 225, internal temp 160 degrees, then remove from the cooker and foil them.
Be sure to put some of your mop juice, or apple juice inside the foil packets to help them steam and get tender.
Smoke them in in the foil for about 1:45 to 2 more hours. Remove the ribs carefully and vent them. They will be fall apart tender now, and fragile. Let them sit.
After about 10 minutes they will have firmed up again enough to move them back onto the grill for glazing. Use some sauce or a finishing rub to taste.
