This can be caused by a defective Maf sensor and coolant sensor, they will not trigger a code because as long as there is a signal the computer doesn't know the actual engine running condition enough to say the signal from the 2 sensors is wrong, this goes double for MAF sensors, another area is the idle speed control motor.. What fault codes showed up in a active scan and memory scan?

HAVE CV (CONSTANT VELOCITY) JOINTS CHECED

Sounds like a bad TPS or fuel pump.

Bleed the air out of the fuel lines. THAT WILL END THIS PROBLEM

sounds like a plugged fuel filter.

Is the check engine light on? If so, rent a scanner and read the code(s) and proceed to a repair. If no light on, it's a guessing game. Did it run out of fuel even though the gauge showed some remaining? Do the lights or horn work (a dead/discharged battery)? Does the engine turn over with the starter?

Sounds like an ECU issue.  check your fuses, see if you can get an error code from a scanner, they have one at most checker auto stores that you can use for free.  Could be a Intake Air Temp sensor or a Throttle Position Sensor.  Thats what I would start with.  Good luck.

To my understanding, your Windstar is in limp home mode (Safe Mode). This is to get you safely to your destination/garage/mechanic with as little possibility of furthering damage to the engine/vehicle. The correct diagnostic procedure would then be to have the computer of the vehicle scanned. Error codes/fault logs would then be displayed. The error codes would pinpoint probable area of fault/where to start further diagnosis.

Incidentally, you might be interested to learn that there was a recall order/technical service bulletin (TSB) on this model regarding "check engine light". This may shed additional insights. There are also info in the same page if you are considering a DIY.
