What is touchwiz home
This isn't thoroughly complete, but it will give you an idea of what it is:
1-> If you go to Task Manager (by holding down the Home button, then selecting the button that looks like a pie chart, you'll have a menu row thing at the top.
If you just go to the button 'Clear Defaults', you'll see Touchwiz Home listed there.
2-> Okay, just remember that for now, and go to Settings (use the widget or just scroll down from the top of the screen & then 'click' on the icon that looks like a spoke.)
In Settings, go to the button at the top, "My Device", and from there, click on the item "Home Screen Mode". Here you are given a choice between Standard Mode and Easy Mode. Just for the time, switch to Easy.
3-> Lastly, go back to Task Manager and the Clear Defaults button. You'll see now that it says Touchwiz Home Easy.

Okay, so all that ppre-amble was to show you that it appears the Touchwiz Thing is the Samsung touch screen interface. Oddly, Wikipedia has some decent into info on the subject:

Yes, verbose, but I didn't know your background, and a few weeks ago I would have loved verbose due to my searching throughout Samsung Docs for this and finding nada... zip... zero. In other words, the normal info from The Samsung Help guides, and although your post was old, I figure if it doesn't help you any more, it might help others.
