Turkey Fryer is deep enough to fry a 12 to 14 pound turkey and wide enough to be used as a seafood boiler. Heating element is made of stainless steel. Turn the timer knob to on. there should be a plunger type button on the botom of the timer. H old this in while pressing the igniter.Continue to hold plunger in for about 10 seconds after the burner lites. If you hear the flame go out , relight and hold a little longer. The timer knob will shut off after about 20 minuites

Why does it shut off early?

I have the same issue. After troubleshooting it, I found that (on my unit) after the fryer has heated up, the microswitch that is pressed when you place the heating element into the fryer no longer makes contact and turns the unit off. This is a nice safety feature when it is operating properly, but is infuriating when you have a turkey that is halfway cooked, but has to complete cooking in the oven or a butane powered turkey cooker. I haven't yet been able to fix this problem. Not sure replacing the part will keep it from happening again. Don't want to bypass the safety switch, but I may have to.

We bought a 22lb turkey but I think we only have an XL fryer. The turkey almost fits but it is still frozen. Can we cook it in the XL fryer if it fits when it thaws.

Probably yes. It will more flexible and elongated when thawed and it likely will be smaller when you pull the neck and giblets from the body cavity allowing the ribcage room to collapse.

The formula for calculating turkey cooking time is 3 minutes per pound, then add 5 minutes to total cooking time, rounding to nearest minute: 13.86 lbs. x 3 mins           41.58 mins Plus 5 minutes                + 5.00 mins                                       =46.58 mins Total cooking time             47.00 mins.

Insert cooking thermometer into the deepest part of turkey and make sure an internal temp of 180 F is reached.
