It would of been helpful to have the model number so I am guessing what yo have, with that being said. One you have adjusted the temp it beeps to tell you the temp is set and then the display returns to what the temp is actually inside the refrigerator you will have to allow 24HRS of operation to achieve the new temp you set.

Obviously you should replace thermostat.
No... I don't know how to do it. Happened to me the same and called a technician to do it

optimum temp is freezer -18C and fridge+5C i personnally reccommend a stand alone thermometer,that way you can adjust for summer and winter.

your "damper vent door" located between the refrigerator and freezer compartments is frozen open or the cold adjustment contron in the refrige is bad and not powering the door as you change the temp set for the refrige and leaving it open,if the door is frozen from ice/frost just de-ice it with a hair dryer and then set the temp adjust and see if it opens and closes with any adjustment

There has to be a control somewhere on the fridge. Some newer models have digital controls located on the outer doors panels, or its going to be inside. Read your owners manual

The problem could be the electronic control if you have one or the mechanical linkages.

check defrost timer, defrost heater, defrost thermostat. In most newer models the timer has been replaced by an electronic control board. If the heater and thermostat are ok it’ll be the control.

ur temprature knob is not adjusted so u have to read the manual ok.read it and adjust it

Check to see if refrigerator door is lower than freezer door. If so remove toe panel, (bottom front). Under refrigerator door hinge at bottom right is adjuster for door. Adjust upward so door is even. On some models when door is too low it causes light to stay on some times, raising ref. temps.
