Goto Contacts list and press the contact you wish to delete twice and a menu will show an option to delete. Select delete and the contact will be deleted.
To change the contact that is assigned to a speed dial key, click Edit. Click a new contact.
To assign the contact to a different speed dial key, click Move. Roll the trackball to move the contact to the new speed dial key. Click the trackball.
To delete the contact from the speed dial list, click Delete.
In the Address Book, select a contact, then select Delete from the Contacts menu or select Delete from the right-click menu.
In the Delete From Address Book window, confirm the deletion by clicking the Yes button.
To delete one or more contacts from your Messenger List:
In your Messenger List, select one or more contact names (hold down the Ctrl key while selecting multiple names), then select Delete from the Contacts menu or select Delete from the right-click menu. The Delete Contact window opens.
Confirm the deletion by clicking the Yes button.

It depends on which phone you are on.
But let me tell you a generic picture. All you have to do is to write a message and go where you see the recent recipients list just move the selection over to some contact (Do not Select it, Just move the selection over it) and press the delete soft-key. Its different in different phones. Its the key from which you can delete any message, picture song. The key from which you backspace the text. I hope you got it... Just press that key and confirm the delete. This will just delete the contact from listing in Recent Message recipients. Not from your Phone. The contact will remain there, so don't worry.

When messages, contacts, photos etc are deleted from a handset or simcard, although deleted all they actually do is free the memory to be listed as useable space, and untill something else is listed over that space your old data is still retrieveable.
You can buy sim card scanners to pull off deleted data and extract to you PC, there is also a number of software available to extract deleted data text messaged etc onto your PC from phone memory.
i am sorry but if you have deleted it it is gone youll have to get it again most phones arnt like computers were you can go into the trashbin and retrive them if you delete something form it it is gone
