When I turn the camera 90 degrees it does not remain in place.
There is a release / lock switch. If put to the lock and it does not hold your camera, you should turn the rubbed large column axe to fasten it more (with light cameras you can release it a little) It is the middle section opposed of the trigger knob.

Under the mounting ring is a almost tube like ring. Turn that.!!!!
I am unable to locate an "almost tube like ring" under the mounting ring. Also unable to locate an operating manual for an AF 2100 pistol grip.
Take the camera mount off. Under that you will see 3 tiny black hex holes and one brass colored hex hole. (1.5 hex wrench) The small black ones loosen and tighten the grip on the camera mount. I first turned them all to the right just to where they were tight, and it was too much and I had trouble getting the mount off again. I loosened the two outside ones opposite each other about 1/4 turn and then it worked again. It is a micro adjustment so only turn a "small" amount each time you try to adjust. When I first tried to adjust the outside ones they were about 1/2 turn loose, and the center most one was only slightly loose, I returned them to where I thought they were to begin with, then turned the outer ones about 1/8 turn to the right and now it appears to be tight enough to hold. If you have trouble getting it just right you can send to slik and they will adjust it for you for a fee. Update: The outermost ones I think tighten each side they are on respectively. The one that is closer to the center adjusts the release mechanism.

To get a firm grip on your knife blade, you should have your thumb firmly placed on one side and your index finger on the other side of your knife. With the remaining 3 fingers loosely curled around the handle. It might feel a bit of an unnatural grip to start with but you will soon get used to it and it's a safe way to hold your knife.
