It is likely there is no actual control panel, but rather a simple dial somewhere located towards the back of the inside the refrigerator compartment that has lettering that states, "warmer/cooler" with arrows that show which direction to turn to change the temperature setting.

How do I fix my refrigerqtor hotpoint double door not defrostiong

Generally, if you unplug the refrigerator and set the freezer and refrigerator temperature controls to off then plug it back it, this will put the refrigerator in forced defrost mode. Keep the doors closed and allow defrosting to last for about 20 minutes. Then unplug again and reset the temperature controls to mid-range or a little above, and plug it back in. If this does not reset the defrost cycle, you probably need service.

GE Profile PSC23MYA-WW control panel not working. Interior lightscome on when door is opened, but ref. and freezer are getting warmer. No way to set temperatures.

The control board must be check. It is where the temperature control and the defrost timer located their electronic control circuit and the button panel. Usually the temperature control and defrost timer must be set and adjusted to be able to control the function of the refrigerator. Since it is not working anymore there's no other option but to check it.
Good luck to you.

Is there a work around for installing a new Temp Control circuit board in a GE Refrigerator Model # PSS27NGMA WW. Orig bd has 3 connectors and new bd only has 2 connectors. I am attempting to replace...

I have a feeling that the temperature control board is not the problem. The fresh food compartment has two thermistors that relay information to motherboard through your control panel. If thermistor is bad or covered by an item it will continue to cool and freeze fresh food. Your air damper between freezer and fresh food compartment may also be wide open.
