Every 5-7 days the defrost water pan overflows. This morning I heard it filling up for 5 minutes or so.

That sould not happen, the condener fan should blow enough air over the pan to take of the waterl. Make sure your coils under your refrigertor are clean. You heard it filling? The only thing fills is the ice maker . I do not have much information. Is this a top mount, freezer on the top or a side by side

Indesit Fridge Freezer

Check freezer... for Frost build up and if Fan is blowing, Check condenser... To make sure clean, and the fan is blowing (by compressor), Check recirclating Vents in refrigerator... to make sure theres no blockage, CONTROLS ...should be in the middle setting, YOU CAN TRY turning FREEZER CONTROL To A WARMER FREEZER SETTING Allowing.. MORE AIR.. to refrigertor side
