screws near the hinge, make sure to get oven/tempered glass sometimes the screws are located in the crack between the oven and door on the bottom

Hello,
NO, I would not recommend this at all. However, I have seen the stoves used without one of the inner glasses with no problems. I am a factory servicer for frigidaire and have seen people use these with one of the glasses broken and haven't seen a problem yet. But again, it's not recommended. www.applianceoutletservice.com

the hinges problably require to be "locked" beforer removing from door frame, usually explains in hte manual "how to remve door". if needed, you can input your model number here, to download a copy

Often these fan assisted type ovens have a safety that keeps th fan off if it believes the door is open. Look for uneven door closing or cracks in the door to frame closure. Is this a commercial convection oven?

Clean between glass on oven door

You just remove the door, undo the handle and screws and split it. Clean with Easy Off, rinse, dry and reassemble.

Replacing oven door glass

You didn't say what brand or model but here is a link to a youtube video for a Frigidaire oven, Other brands and models on youtube too. You will probably be able to get a replacement kit from sears parts direct if you have the brand and model number. Or an appliance parts store or ebay.

most likely thermal fuse behind oven take off back plate and you will see the brown wire with the heat shrink sleeving covering the fuse.wire and fuse comes as one part

Broken inner glass on Model # NGSG3PZAQA

To replace the door glass do the following:

0 Check if there is a hinge stop bracket located at the hinge point of entry on the oven, in that case remove it.
1 remove the oven door by pulling it up and removing from the the hinges. If glass is broken , then secure glass with tape. Have a table with a cloth on top ready to lay the door.
2 Remove the outer screws , starting from lower side of the panel.
3Removethe inner screws. Keep all set of screws ordered, and take note of theorder you remove them. You will follow reverse order in reassembly.
4 the frame will be free now,
5 Remove the external glass panel and leave it in a safe place.
6 Replace the inner glass.
7 Clean outer glass and metal door, re-assemble it and mount it back

"removed the door from the oven by releasing clips attached to the door hinge -- very nicely engineered. Removed about 6 philips head screws to allow the door assembly to be taken apart for access to the glass. Lifted out the broken glass, cleaned the inside of the door, installed the new glass, reassembled the door (a two minute project), and reattached the door to the oven. Cleaning the inside of the door"

"I removed the oven door by lifting it off with the hinges. Disassembled the door parts one at time making sure I remember where I removed the screws until I am able to get to the broken glass. The most difficult part is making sure that the insulation strip & the gasket stayed in place after I replaced the broken glass & doing the reverse process of installing the parts together. Relatively easy process as long as you remember where the parts go. When in doubt, I had to refer to the pictorial of the disassembled door shown on your website. "
