Hi I use to repair every kind of restaurant equipment under the sun..maybe I can help...Is this a new install of the fryer and it never did this before, or did this just start do this..If a new install, the first thing I would check is the gas regulator and see if it is for Nat gas or Lp gas, and find that out..cause it has to match what you have, comming into the building..usuall the gas valve has a sticker on it that says what the water columbs are like for Nat it is like 3-6, and for Lp(propane) it is like 5-12. Ive seen customers buy a used fryer, and install a LP fryer in a Natural gas build, and the valve lets too much gas to the burners, and it will shoot flames out the top..then you would have to buy and convert a gas valve, or use parts to convert it..let me know further..

Check pilot flame is it good, is the thermocouple in the flame, is the flue causing a down draft, or to much updraft, Is the ceiling in your closet close to flue to keep a downdraft out. Last replace gas valve.

Hi there. Flames rolling back instead of shooting inside the fire tubes can be a result of clogged fire tubes or air entering the flue, also check if there are objects blocking the flue. Regards.

Was the end of the spiral flue baffle burned up? If it was it could be disrupting the air flow which will not allow it to reach the proper temperature. Does the flame stay lit or does it go out after a while? If it is going out after a while the thermo-switch that detects high heat may be shutting it down due to the flame being too hot. you do not say if it is a conventional flue or balanced flue model. If it is a conventional flue you cannot just buy a thermocouple. It is integral with the pilot assembley and must not be tampered with. This is an ODS safety device. The problem might not be with the thermocouple as there are other components on the circuit.

Heater fires up and runs for a few seconds and shuts off think the heat exchanger is filthy would that cause it.

There are several things that can cause this:

Check for blockage in the flue pipe or improper flue design resulting in inadequate venting.
One way to quickly determine a venting issue is to visually observe the flame on the burn tray. It should NOT be yellow and should burn evenly across the burner. There should NOT be any areas of the burner that appear to burned or deteriorated. Look for evidence of leaks,

You may need to dismantle the top section of the heater to visually inspect for sooting.
You may need to inspect the flame sensor mechanism (if applicable) for dirt or sooting.

If it is determined that your exchanger is sooted up, you have a blockage in the flue pipe or improperly designed flue.

Hi there. When calling for cold, flame should be large and blue. If orange, clean mixing tube, flue, chimney. If still orange, adjust "air" inlet on mixing tube to get blue flame.

Hi ejohn,

There is no valuable, practical adjustment for the flame on a Toyo Stove. A yellow flame can be caused by several things. How old is the stove? When was the last tune-up? A dirty sooty carboned up stove will have a yellow flame. A breach in the flue pipe will cause a yellow flame. An incorrect installation of the flue and exhaust hoses/metal exhaust elbow will cause a yellow flame. In the last scenario, the intake will be hooked to the exhaust and the exhaust will be hooked to the intake ports of the flue pipe. A malfunctioning fuel pump can also cause a yellow flame. The wrong fuel can cause a yellow flame, too. Most likely, your stove is dirty and needs a tuneup. It should have a bright blue flame if it is clean, and operating correctly.
