Testdisk/Photorec will find nearly all of your data. Files aren't typically overwritten only renamed until more space is needed.

With two caveats:
1.) One you old data wasn't lying directly under a new disk partition boundary, or newly created file. Restoring RAID sets ARE salvageable but require a great deal of experience.
2.) The longer you use the newly formatted disk the more precious old data will be overwritten with new files.
