As to your husband's showing up on your Kindle. Do you have a "family account"? Go to Manage Your Content and Devices. Within the info on your device may be a line Family Library with a check box of Show "husband's" content. If you don't want his books on your device, uncheck this box.
As to organizing content, you can create Collections. Within the list of your books, there is a column called Collections. Go to a title and click the zero that appears in that column. It will say something like you don't have any books in a collection and ask if you want to create a collection. Create your category, such as Read, Unread, SciFi, Travel, Fiction, Nonfiction or whatever. After you've made the collection name, you can click a button at the bottom that says Add to Collections. You can add a title to multiple collections. After you created all your categories, it's easy to just click boxes and buttons.
From the carousel you can touch and hold the picture of the book until the menu appears. In the top right you can see +Add or trash can remove. When you select trash can remove you will get the option From Carousel or From Cloud. If you select From Carousel you won't see it in your Carousel menu. If you select From Cloud it removes it from your account.

You need to long touch the books you want removed. A menu will appear with various options. Among them will be something like, "Remove from Device*. Select that option to remove the book. The book will still remain on your Cloud should you wish to download it again at some future time.
Should you wish to keep a copy of books locally but you wish to remove some of the clutter of books listed individually on the home screen, you can long touch the book and select *Add to Collection*. On the screen that comes up you can add a custom collection such as *Science Books* by touching the three horizontal bars on the top right and select *Create New Collection*
This allows you to have a bunch of books stored locally without pages and pages of individual books on the home screen to scroll through.
If you purchased the book from the Amazon store, it will still be in the Cloud.
Go to Books and there should be two buttons under the clock that say Cloud and Device. Click on Cloud and your deleted book should be there.
Simply re-download it at no extra cost.
Have you tried a reset? It clears up many problems that just happens for no reason. To delete books from your device, go to Amazon an use thier Manage my Kindle it removes them completely.
If it is in the Carousel (Home Display) just press on the book icon and hold your finger on it until you get the option to either remove it from the carousel or the device. In your case you would want to select "Remove from Device" But if want to keep the book on your Kindle and just remove it from the Carousel, select "Remove from Carousel"
If your book is not in the Carousel but only in your book library, go to your book library and first make sure you have selected the Device tab (instead of Cloud tabx`) selected. Then follow the same procedure in which case you will only be given the option to remove from the device. If you select the Cloud tab first and then delete it, you will lose all access to the book in the future (although it still may remain on your Kindle until you delete it there - not sure. You would need to check). But even if you do delete it everywhere, if you call Amazon Kindle Support at 866-321-8851, they could verify that you once purchased the book and would put the book back in your Cloud storage again.
