Why fryer heat up and than the gas shut off

If the pilot light goes off too, then the thermocouple is defective. Otherwise its the thermostat or heat overload protector trips due to excessive temperatures.

CHECK THE SMALL SOLINOID THAT FEED THE PILOT IF THAT OPENES EVERYTIME THE FRYER STARTES THERES YOUR PROBLEM REPLACE IT AND ALL SHOULD BE WELL

check the ignition system.controller will display help when burners do not respond during heat start-up or heat demands.also check if the unit receives sufficient fuel for ignition.

Pitco Fryer will not light up

Check the thermopile, it must be free of dirt or soot so that it can absorb enough heat from pilot flame and in turn can generate the right amount of voltage to energize pilot and burner coils.
Check also the gas pressure, it should be of standard as required on the unit's nameplate.

I put it on any temp and it heats to 550 degrees

Replace the thermostat, P5047588. If the fryer is not shutting off, both main burner and pilot, when it overheats, also replace the high limit PP10084. The high limit usually shuts the fryer off at about 425-450F. Check your thermometer. A fryer should never get up to 550F.

Temp got to hot and shut down high limit. Also check for a broken wire to high limit

If this is an electric fryer you may have a shorted element that will continue to heat when ever the fryer is turned on,even when it is not calling for heat. If it has 3 phase power, the elements could be wired wrong
