I could never get my Control Center software to behave, so I just sucked it up and used Paperport.
I got my first copy several years ago with a scanner and have upgraded through each edition.
With the Brother software, I can put the documents into the feeder, run Control Center on my computer, and it let me edit the application that opens when I click Scan to Email, but the attachment always messed up and gave an error.
With Paperport, I click on Scan Settings and I am presented with options to pick a document type (color, b&w and resolution) and device options including auto straighten, pdf, OCR, etc. As it's scanned, I can then merge or unmerge the pdf pages and name them by hand.
It is a $100 program, but they usually offer it for half price most anywhere from time-to-time.

There are other Scan to email software programs, that may be free, that will do the same thing.
