my friend it looks as if you have a leaking frypot. Do not use this fryer untill the frypot is replaced it is dangerous to use in this condition.

Make sure the regulator assembly on the gas valve is for propane. Sounds like the gas pressure is too low and the flames aren't going into the burner tubes. Make sure they didn't install an appliance regulator on the back of the fryer. This is not needed as the fryer has a regulator on the gas valve. You can unscrew the cap on the regulator assembly and turn the plastic screw inside all the way in. DO not turn with alot of force. Easy does it.

Hi there.
You should inspect the fire tubes, it is a tunnel under the fry tank where the burner flames suppose to travel to heat up the oil. Your fire tubes may be clogged with soot or carbon that's why flames cannot go thru the fire tubes. Fire tubes must be free of soot or carbon deposits.
Soot build up on fire tubes can be prevented by keeping the gas pressure at standard as much as possible, low gas pressure produce yellow flame or poor flame quality and in turn will produce soot.
Also, make sure that no air or ventilation is directed towards the flue riser, otherwise, the same will result, flames rolling back towards the door.

Avantco Gas Fryer. The pilot on the gas fryer does not remain on.

There are normally three reasons for this.

The thermocouple safety device has failed. That is the probe that sits in the pilot flame.

Or the flame deflector over the thermocouple has moved, dropped off or burned away.

Or you are not holding the pilot button in long enough. It needs to almost glow. At my restaurant we sometimes used a gas torch to heat it up. If that didn't work, we just replaced the thermocouple, we kept spares. They lasted 6 months to 18 months depending on which appliance.

My fryer is propane run and it sends out a flame about a foot up the stack at times how to fix t?

And you are sure you are not using Butane or some other gas?
Never use old or outdated gas burners, for your own safety.

Hi Dan.
Check if the fire tubes are clean, exhust system must be operating well during fryer operation. There should be no fresh air directed at the flue stack of the fryer, only exhaust.

I bought a dcs fryer at a restaurant auction. I had it installed in my restaurant, and when I got it going flames were shooting out of the back. I had it looked at, but because there is no serial number...

The difference between Natural Gas Set Up and Propane Gas Set Up on Fryers are as follows:
Natural gas burner orifice has larger bore (#52) than Propane Gas burner orifice (#55 or #56).
Gas Valve's spring kit for natural gas has less tension (thinner) than Propane.
You have to order burner orifice ( the quantity depends on the number of burners your fryer has), pilot orifice and Gas Valve Spring Kit for Propane Gas if your fryer is set for Natural Gas or vice versa.
