First, make sure your TV is on the appropriate input for the plugged in HDMI cable. Once this is completed, turn your ps3 on. If the screen comes on and is black, turn the ps3 to standby (red light is on) and hold the front power button until the console beeps a second time. This will usually force the ps3 to recognize the hdmi input and will bring up the menu to configure the AV settings.
when the system is in stand by hold down the power button for 15 seconds and it will do an auto - video reset to the used video component. same works if you want to go back to hdmi just hold it down again.
Your display needs to be reset, Turn the ps3 off. Then turn the ps3 back on but continue to press the power button until you hear the beeps then it should work fine :)
you have to manually change the output in the settings menu back to ANALOG Using an HDMI TV or monitor 1st, when you select RCA, or AV output and restart, it will work, but when you switch back, you have to change it (back to HDMI output) on the analog monitor, or use analog TV inputs, then reboot PS3 and connect HDMI.
I do not know why Sony did not make this switch automatic and self scanning on boot, but alas I have had the same issue, so I know this is your problem, not the AV cables.

It happened to me too. When you plug in your av cables and are ready to play, follow these steps. With your PS3 off (Red light on), Press and hold the power button on your console. (Do not use the controller to turn it on.) Keep holding the button until you hear a second beep. (it takes about 2 to 3 seconds.) You will notice your screen flickers, then your PS3 will show up on the tv. All you did was reset the PS3 display settings. You can always go back to HDMI or AV cables. Have Fun.
After you selected connector your TV screen may go staid black. Try to hook your HD cable while the system is still on. (This step should be done in 30 sec. If not, will go back to previous screen)
Have both the AV cables and hdmi cables hooked up from the tv to the
ps3. On the TV Menu goto the av station which is different from the
HDMi station...From the ps3 menu screen gotot settings then to video
and audio and select hdmi then back to the tv menu and select the hdmi
station and the ps3 main menu should be seen and you are all set
i currently have the exact same problem...i always play HDMI but i went home from college for thanksgiving and wanted to play on a regular AV jack TV, hooked up, and have no picture whatsoever...and i think it's because of the settings on the PS3 since it's set to send out an HD signal...Well i found this straight from Playstation3.com, on the support/troubleshooting section
"
If the video output settings on the PLAYSTATION®3 do not match
those of the cable or TV in use, there may be no picture. If the screen
goes blank, turn off the system.
Then, with only the PLAYSTATION®3 and the TV connected,
touch the system's power button for more than 5 seconds to turn the
system back on. The video output settings will automatically be reset
to the standard resolution."
