Only if you made a backup in iTunes. I think you still can make a backup, if you have iTunes on your PC or MAC
If you don't have the iPod "open" i don't think it will.
If you have a backup on iTunes, and you did reset the iPod, after you connect it to iTunes it will ask install as existing.

Using the Restore function for your iPod touch is part of standard troubleshooting procedure. Restoring your device will erase all data from your iPod touch, including songs, videos, contacts, photos, calendar information, and any other data. All iPod touch settings are restored to their factory condition.
Whenever you restore your iPod touch, Apple highly recommends that you perform a sync prior to restoring in order to back up any changes since your last sync. If you have movie rentals on the device, see this document before restoring.
Use the following steps to restore your iPod touch:
Make sure you have the latest version of iTunes installed and running before attempting to update. Connect your iPod touch to your computer. Select your iPod touch when it appears in iTunes under Devices. Select the Summary tab. Select the Restore option. When prompted to back up your iPod touch's settings before restoring, select the Back Up option. If have just backed up the device, it is not necessary to create another.
Select the Restore option when iTunes prompts you (As long as you've backed up your device, you should not have to worry about restoring your iPod touch).
Once the restore process has completed the iPod touch restarts and displays the Apple logo while starting up

Unlock Screen Lock and Volume Lock for Windows Vista

First you need to click on My Computer with your iPod connected.
The click on the iPod, click organized, select folder and search options, now click View the click to show hidden files and folders then click apply.

You should now see a folder named iPod_Control, click into this, then click device, now delete the file named: _locked to reset the screen lock and delete _volumelocked

when you enter wrong passcode many time than your iphone will be disabled locked. and only option available is restore iphone with recent backup. so you wont lost much data.
Below trick is working with ipod you can try it with iphone and at the end of the post i have given detail procedure for how to restore iphone without deleting data.

First try to recover your password for that connect your iphone to computer via usb cable.
Now ipod iphone is recognize by computer and find the folder named ipod. Now browse ipod folder and open ipod_control folder , inside that folder there is ipod _unlock file. Try to edit that file with some software to recover your password inside that file otherwise. Delete or rename that file and power of your ipod and restart it. There is other way to recover password but when I put such answer my answer marked as spam and deleted and some senior member using that answer method for their answer and get reputation.
Ipod got disabled when you have entered wrong passcode many times. And to unlock this passcode either recover your passcode from ipod or restore your ipod via ituens.
For that connect ipod to computer and if ipod is recognized by computer then open itunes click on device tab then summary tab on right side pane you will find restore ipod.Click on restore ipod and ipod will be restored but this will erase all data on ipod.
If you don't want to delete data then there is option to restore ipod from backup. So restore ipod from recent backup. For that open itunes - click on devices and right click on ipod there you will find option restore from backup.
If none of above method can solve your problem then enter into dfu or recovery mode. For that connect your ipod via usb cable to computer and thenPower off your ipod, now press and hold power button and home button for 15 seconds, now release power buttonbut keep holding home button now itunes will detect ipod in recovery mode now restore your ipod. A friend of my daughter changed her passcode to get into her ipod touch and somehow she disabled her ipod touch how do we enable it without creating a new account she has remembered her passcode now.

The only thing I can recommend is allowing it to reset itself after the 10th failed passcode. If you have movies or music that you do not want to lose or images I suggest you search for a program called iFunbox.

The only way is to restore the iPod with iTunes and that will restore your latest backup, assuming one was made. You may lose some data depending on what was backed up and when it was made. There is no way to unlock without passcode apart from restoring.

From what I gather in your post, it seems that your touch has had too many wrong attempts at the passcode, so now it won't even give you the number pad to try again.

It is now necessary to restore the touch on the computer that was used to originally sync it, so you can reset your passcode and resync the data.

If you use a different computer, you will be able to unlock and remove passcode, but you will lose your data.
