I have a unit from the previous owner and I want to change the recite to print my company name. I want to keep the preset information but change the name printed on the recite.

The exact functionality you are requesting is located on page 52 of the Casio TE-2000 user manual. Pages 48 through 55 are a good read for you as well. You can access the manual at this location:

Specifically, you will be changing the store logo and message header information to reflect your current store. The process is rather straight forward, and only requires about 5 to 10 minutes of work on your part.

Those three questions will help you program your unit. As the instructions on Page 52 outline, you'll need to insert the PGM (programming) key into the machine, and then do the following:
From there, you have to enter a special code made up of the first 3 questions:
In your head, start at 0, and then add:
Now, take that total (whatever it is), and enter it. So, if you want a Text message AND a commercial message at the top of the receipt, but no bottom message, it would be: 1 + 2 + 0 or 3. You would then enter '0000000' (that's 7 0's). So, that would be '30000000' You then press the 'CA /AMT = /TEND' key. And then 'Sub Total'. From there, you can program your message following the instructions.
I know it can sound confusing, but these are just ways the machine understands what exactly you want it to do. Please refer to the user manual, as it outlines the exact process you need to do. You will also need to refer to the character code table in the user manual (on page 54) just to be able to enter text as it is.

A very rare but great machine. You need to pull the stamp out from the back of the receipt side of the printer (there is a small black handle that you pull just under the paper entry). Then take the stamp to a stamp maker to get your name, tax number etc cut into a new stamp.

If you removed the batteries and lost all of the other programming but the old receipt message is still there, then someone has programmed a bitmap logo into the non volatile flash memory. You should take it to a dealer and get them to flash the logo back out and ask them to change it to a normal text logo so you can program it yourself.
