Its either the temp sensor found in the top corner of the oven cavity most common or it could be a faulty control

Check to make sure the bake element is coming on. If so try replacing the thermostat.

I have a used Tappan gas range with 4 burners and a griddle in between the burners. everything works, but the oven temp varies about 40 degrees above and below the setpoint. it never seems to level out...

not normal
problem thermostat not lighting the gas or turning the gas off to maintain an even temp
temp variation should be around a 10 degree range
call a gas fitter to check out the oven controls , thermostat or thermocouple

My oven is burning my baked goods, but shows the right temp with a thermometer. Do I have to turn the dial to broil and then back to the desired temp? Even if the rack is in the middle, everything burns....

If it is convection bake you have to turn the temp down (25 degrees or so) that is listed in the recipe.

The broil setting is not used to bake because it operates differently from the bake setting. So, don't go to the broil setting at all.
The element for bake is under the floor of the oven. You have not indicated whether it is gas or electric, but both of these can have issues with the burner or element.

If you are baking on the correct setting and the oven is heating from the bottom, not the top, this can be caused by hot spots that are created by elements/burners.

to check, look under the floor of the oven. Turn the bake heat up to high and see if the flame is uneven. For an electric oven, the color of the element should be evenly red, no brown spots.

If you are using an oven thermometer, move the thermometer to the spot in the oven that seems to be burning things the most.

How do you know when the oven achieves the desired temp? does the oven temp light go off?

Yes, but oven temperatures are notorious for being off. The best way to know what your internal temp is is to buy a half way decent oven thermometer and compare that reading with the oven temp setting. It is not uncommon to have a 50-100 degree difference.

Tappan gas oven won't turn on

Hello,
I cannot assist you with your problem, but I do have the same oven and it seems the control panel doesn't work either. However, I am looking for the manual. Would you perhaps be able to help me with that? Sincerely, S. Rozier

Tappan Oven #MEF500PBWD heating unevenly

Perhaps the item you are using to check temperatures is not accurate. I my line of work, I use a digital thermometer which records immediate temperature. Perhaps understanding the process will help you see more accuracy in the way you read the temperature in your oven. Allow me to offer this explanation....First of all, place your thermometer near on the top rack as close to the oven temperature probe as possible. This probe is the focal point for your oven and detects the temperature and opens the electrical circuit to turn off the element when the desired set temperature is attained. Set your electric oven to 300 degrees and hopefully, you have a window in your oven to watch. The bake element will come on and the temperature will rise until it reaches 300 degrees. It is at this point when your oven bake indicator light should go out. When this happens....look inside. The element is still bright orange and emitting heat and will continue to raise the temperature in the oven to approximately 325 - 340 degrees. With this noted, you will see the temperature beginning to drop 315, 310, 300, 295, 290, 285 perhaps even 280 or some even lower to 275 and then the indicator lamp will go on indicating the circuit has closed thus turning on the element, Finally there is a variance and no range GAS or ELECTRIC will ever maintain a even 300 degree temperature. The calibration set point is based on the 300 degrees. If your oven light goes off within 20-25 degrees of three hundred degrees, your oven is already calibrated pretty close and I would not attempt to adjust it at all.

Oven tempature is 35 degrees celcius less than set tempature even after adjusting oven tempature control

if you read your tappan instructions, it will tell you to turn your oven to 550 degrees, then press and hold the bake button for 15 seconds. it will blank out and go to 0. adjust temp up or down accordingly. peace out.

Oven temp off

You either have a plug up in your flame from dirt etc.
or your valve needs to be replaced.
Try turning off the gas and getting to the burner and clean it first.
