Tannins are a series of hydroxyl groups connected together (that is long chains of H Hydrogen & O Oxygen bonds). Tannic acid is a series of dozens of these hydroxyl's, but there are many other naturally occurring and synthetic Tannins. Tannins love to react (join up with) with other complex molecules like proteins, to form strong polymers. They have been used in tanning hides into leather for centuries.
In the case of the carpet cleaner, I suspect that they bind to whatever brown stain gunk you had in your carpet then form a new compound that can be rinsed away :) How did it work ?
