Old message, I'm sure you have solved your problem by now, but . . .
IF Amana/Whirlpool conforms to wiring standards (no guarantees), the main AC wires should be white=neutral, black=hot, red=switched line.  Of course, they already depart with the use of the brown wire.
You should be able to access the 'full' switch at the ice maker itself and as you have found, it will turn on (or off) the fill solenoid.
It would be kind to post back what you found as it might benefit others in the future.

could be carbon particles from a broken carbon filter cartridge. replace the filter and flush about 5 gallons of water before checking the water again that comes out of the dispenser.
