There is a cold start "sequence" which is suppose to reset the engine controls as if you had a choke. This sequence is triggered by water temperature sensors on the engine.
This sensor is different from the one operating the dash gauge. It is probably stuck on a "hot" setting and the engine controls do not reset.
i only have questions. after all , i sure can drive it and test , 1: car starts cold or hot engine? , does it stall only under certain condtions. ? have you ever done the 60k mile tuneup? at that time most problems will be solved or discovered. aka: the 60k service points.

check idle air controll motor, Lightly tap it while vehical is running, If this helps, you will need to replace it, usaly 55.00 at the zone
it needs to be put on a computer to have the airbag computer reset
