Hi,
The problem you are having is pretty standard, the IP based printing works for most printers but the scanner require direct(or well faked, direct) connectivity with a USB port which most routers do not provide.
Several companies including Startech and Io Gear make Virtual USB devices which would resolve the issue.
How they work differs as instead of creating an IP printer, the usb device installs on an ip and then a driver you install on your PC(s) connect to the unit over the router and sets up a virtual USB port on your machine so you can re-install the printer as a local printer attached to what it thinks is a local USB port.
Doing this will allow you all functionality the printer offers but will slow down printing and scanning a bit

Remove your printer from the PC and uninstall the printer software. Now reinstall the printer driver software and connect the Printer to be detected and installed. Check printer properties to see the ink levels.
