615 fd star fryer ...pilot lights....burners kick on ...a min later it kills the burner and the pilot

Pilot lite working. When temp switch turn up to 365 you can here a click but gas burners do not light. Sometimes when you turn the switch back and forth the burners will light and bring oil to temp. and shut off but as oil cools burners do not come back on.

Since you've mention the pilot light goes out at 400 degree F, then we are talking a gas Deep Fryer. The deepfryer usually use at 350 degree F for chips or else. Because the oil will start breaking down its quantity of frying very quickly over that temperature. Most people set at 350 degree F. Now we comes back to your problem, First you should have a deep fryer thermometer they espcially made for deep fryer, (You only mention 400 or better ) that make me think you're only guessing. Knowing the temperature is very important, most Hi limit is set at 420 degree F.
To me it seen the Hi Ltd control is working and that is why it cutting out the pilot when it reach its limit but we don't know what temperature that when the hi limit cutting out at.
When you have a thermometer, put it in the cold oil and turn the temperature to 100 degree F to see what the temperature control cutting out at. slowly increase your setting until it cutting out at 350 degree F . If you set at 250 degree F and the thermometer already reaching 350 degreen F then don't go any further , your temperature control is defective and need to be change a new one.
This is only the first step, you still have to check out the Hi ltd control to see how good its condition is,so far your information say it cutting out at 400 or better. But you've to be sure, because it is a safety control. Hope that will help you , God Bless.

I change the thermocople but now the burner don't lit

Hi there!
Check if the thermocouple is properly heated by the pilot flame.
Check also if the hi limit has continuity across the terminals.

Fryer pilot will light and heat up then when burners kick off and try to relight the pilot is out

Could be thermostat is bad and/or high limit as well. I'd start with the thermostat, and if that doesn't fix it, move onto the high limit...I could get you a price, but I need a model/serial number both first...

Pilot light goes out when burner turned on

Replace the pilot generator. You are not getting the millivolts you need when you turn on the fryer.

Burner and pilot run then kick off

if this is electronic ignition you have a dirty flame sensor.
If you have a standing pilot light you should remove, dismantle and clean the pilot assembley.
Makec sure you clean the small gas oriface located inside the pilot assembly.
When you put it back together I would install a thermocoupling. Can be purchased for about $10 -$14 at any hardware store.

Main burner will not light or goes out before grease reaches temperature.

before replacing any parts,clean out the pilot,burner orfices and burners.if this doesnt solve your problem replace the thermopile.call 18884hobart and get the parts dept.tell them you need a thermopile for the model of your fryer.95% of the time the t-pile goes bad.theres also the hilimit in the unit that kills the gas if the fryer gets too hot but i dont think thats the problem.also check all wiring connections to the gas valve (clean and free of grease).drain the oil in the tank and youll see 2 bulbs ones the thermostat bulb the others the hilimit bulb.make sure their secured to the bracket.

Sounds like the burners are dirty remove burners and run under cold water and replace propane gas burns dirty and might have blocked up burners creating a pop at the burners this will then blow out pilot light if this does not work give me a shout
