BREAD OVERBAKES I was cooking a whole wheat loaf and it got way too done on the whole wheat cycle. Next day I cooked a different type of bread with whole wheat flour and removed it 30 mind. early and it was perfect. Manual, of course, doesn't have this problem listed in the trouble shooting portion. It is very unlikely that I will every make a bread with while flour. Thank you much.

Take a look at your manual. There are a couple pages with charts showing the kneading and bake times for the machine. Try setting a cycle for a smaller loaf. I have a similar problem and had been setting a timer to take my loaf out early.

push the stop button until your machine beeps, then unplug it and plug it back in. push select and push it again and again and you will get more confident as you see it go through the choices such as basic, whole wheat, french etc...... you will get more confident about how to choose. Once you feel you have the right program leave it there and then choose things such as the crust color you want and the LOAF SIZE once you feel you have the right settings say....whole wheat, light crust, 1.5 pound loaf.......then....push start and the fun will begin....

Yes, many machines warm up a little when you choose the wheat setting, also if your manual shows the cycle times for the various programs you will probably notice a different Knead time (more) vs. the basic program and that is because whole wheat flour lacks enough gluten to make a nice, large, soft loaf, so to compensate it has a longer knead. Even with that though your whole wheat loaves are probably going to be shorter than a 100 whole wheat loaf.
Many bakers ( me included) add purchased wheat gluten and add that to the flour, (be sure to remove and equal amount of w. wheat flour from the recipe if you do this) to get a softer, higher, better texture loaf.

Could be old flour or old yeast, not enough fluid. And the temperature of your kitchen.
Usually half a cup of raisins and usually there is a beep when to add, but can be added the second knead cycle. depends on the recipes. Also, I find that if you roll the raisins in a dusting of flour it helps them distribute through the loaf better.

That is usually part of the whole wheat program. I don't know if you can program it out or not but you could compare the program with the "basic" program and try using that instead if you think it might work. To have a decent loaf you may have to replace some of your whole wheat flour with bread flour and perhaps some vital wheat gluten and experiment to see if you get a good loaf. Many bread makers have the rest period to start their whole wheat program.

I have an Oster 5838 Bread machine. How do I select the bread size? I want to make a 1 1/2 pound loaf and it is over cooking. Thank you.

If it is overcooking it is either cooking too hot or too long. You can select a lighter loaf (L) or set a separate timer and take it out a few minutes before the bread machine says it is done. Sweeter breads brown faster.

I don't have an owers manuel for my oster bread maker model 5814

Most bread machines have the different loaf types on the top. Pick the bread type (white, whole wheat etc.) Then you have a choice of weight and color of crust. The choices come up on the main screen. You should see the bottons next to or near the screen. Then push start and wait for the beeper to sound and it's done. Hope this helps.

TR440 Breadman won't begin kneading once "start" button is pushed

Hi Mindy.......it takes 30 minutes to PREHEAT this silly machine for wheat bread. I thought I did something wrong, too........I stopped it twice after it preheated for about 15 minutes. I did not want to waste anything so I let it stay in the machine.....I just went to check the machine and it started after 30 minutes of preheating.

I wish they would mention this in the book!!!

Heavy dry wheat bread

You can try replacing some of the heavier wheat flour with some lighter sifted bread flour. (You'll need to sift the wheat flour too.) I use Splenda when I can to try to keep the calories and carbs down, but a small amount of molassas can help sweeten too. Try experimenting with different amounts until you get one you like. You might try using fruit juice for liquid; it can sweeten while mixing in the flours. Good Luck and have fun eating your experiments.

Bread making

I had the same problem with a loaf of whole wheat bread. I also am a new bread machine user and followed directions explicitly. What I figured out was that the pan was not seated all the way into the clips so the paddle mechanism wasn't connected to the motor.
