I switched to a MAC and loaded the driver, also downloaded suggested driver from Epson website. I get a message "scanner cannot be started" or another "the application Epson Copy Utility quit unexpectedly.

Check that it is installing to the correct file. Normally C Drive "Program files" I would suggest you go to the control panel and locate and completely uninstall the Epson scanner program first. This will give you a clean install. Check that during the installation, the disc may ask where you want the program to be installed. If it has a suggestion, let it instal itself, where it thinks is best.
Ensure that directory is delete when you uninstall and there mates ie........ /EPSON/......whatevers.
Use a new set of downloaded drivers from elsewhere, not the same ones if you can help it and if you cant it is because they dont really exist, ones that work will be many places....... ensure full compatability to your mac OS, I can't help you much there but I can assure you it isn't a problem with the printer it is a mac/driver issue. is there an ok button on that error message? if so just click on OK button and click on a button says manual.
It will let you check on the settings on the printer. paper size should be A4.
on print settings it should let you select on cd/dvd
Note: this only works if you have installed the epson easy print from the epson.com website of your printer model
First, install "epson easyprint" from the epson website. Its found under drivers and support for your unit.
Then click ok on that error message about "driver dealing with..." After you click ok on the message, you will get another window where you will find a "manual print" button. Click on this manual print button and this will take you to the next window where you have to select "A4 as the paper size" and "CD/DVD as the paper type and paper path" . After this, click print... it should start to print! This is just a workaround until epson gets a patch for leopard for print cd........hopefully
