Even though the cartridges are fresh and I'm printing a black and white document, whether it's from the internet or Microsoft word
Try selecting an option in the printing properties to print in grayscale or black and white (you usually only have either one or the other). This will utilise ONLY the black cartridge, the color will remain dormant which should make your prints come out in black and white - if not, your black cartridge, or the space between the bottom of the black cartridge and the paper is contaminated with color ink.
