Go to the "properties" and/or "nose" around for a screen that will give you the option to print in gray and/or black. It's there. Sometimes you have to go to the "advanced" functions.

Have you deleted the printer and re-installed it with the latest drivers down-loaded from HP?
What is the status of the black toner?
It is a bit difficult trying to work out a problem, but experimenting with different solutions such as re-installing as a new printer is about all I can suggest at this time. Should I come up with something else, I will get back to you.

I understand about gray scale or print in black only. However, once you reach the "THRESHOLD", the printer defaults and will not allow you to print, even in black or grayscale.
I just gave up and purchased new color ink. over $200. I recent class action law suit against HP for this problem. A link to a hot fix is available but I have yet to find it.
HP came out with instructions that from the menu of the printer (only) can you set the override feature and it will print in black only. No further need to purchase color cartridges. Just search net for "2600n printer cartridge override instructions."
