Is this the original ice maker?
If it is you should be able to pull off front cap on icemaker head and see a adjustment screw with a - and + signs adjust towards - tell required level is reached..
most new model icemaker have NO adjustments.. has a circuit board for a brain..lol and takes care of the adjustments

The most likely reason for this happening is a defective Click Here=> 241734301 Triple Water Control Valve These valves are located on rear of refrigerator and near floor where the water supply enters your Refrigerator. You are right - it is filling up with too much water. If you remove the front panel of ice maker you will find a screw there that adjusts the length of time that the solenoid stays open to admit water. Turn it counter clockwise to reduce the time and amount of water entering the ice maker.

You have a solenoid switch which switches the dispenser back
and forth from crushed to cube. It could be stuck or not working or the parts
connecting it could be disconnected or broken. You will have to observe to see
if any parts are moving and if any noise is coming from the solenoid. With your model number I can find a diagram which may help.

Press the little button on the bottom right of the ice maker and clear the tray of ice. The maker has to be turned on for the tray to tilt and empty. This corrected the problem for me. The freezer side may have been left open and and the ice maker filled the tray while the door was open, I suspect.
The ice maker itself sounds like its not calling for water, you would need to replace ice maker, not field servicable. did you switch the solenoid? or the wire(s) leading to solenoid??? by switch the wire(s) when you depress for water the ice tray will fill with water. reason i say that is possible that the solenoid is energized, perhaps the valve post its sitting on is no good
